Gelato Fresh commenced operations in July 2004 with "Bellissimo Gelateria" in the centre of Cairns, Far North Queensland, Australia, selling gourmet artisan gelato. Encompassing an extensive range of flavors, with 28 on display everyday, the retail outlet has been a huge success.

Following from this achievement, a further "Bellissimo Gelateria" store was opened in September 2005, situated in Lygon Street, Carlton, Melbourne, Australia.

With the demand for the quality gelato exceeding supply during 2005 and 2006, the business established its own commercial artisan gelato production facility, in Cairns, Far North Queensland, opened in June 2006. The facility will supply high quality wholesale gelato to the local, national and export market.
